Fluffy Japanese Pancakes

 2 egg yolks
 3 tbsp sugar
 1 tsp vanilla
 ½ cup milk
 ¾ cup pancake mix ( I use Kodiak )
 4 egg whites

Mix together the pancake mix, egg yolks, sugar, milk, and vanilla in bowl until smooth.

In a separate bowl, beat egg whites with a hand mixer until you see stiff peaks.

Gently fold egg whites into the pancake batter, making sure to not over mix and flatten the batter.

Put two heaping scoops of the batter in a lightly greased pan over low heat. ( Tip: Use cooking spray, or very lightly oil the pan.) You can make these pancakes higher by scooping extra batter in a vertical manner Cover and cook for about 3 mins, then gently flip the pancakes and finish cooking for 2 more mins. Serve and enjoy!
