Reverse Seared Steak with Blue Cheese & Herb Compound Butter

 2 Sirloin Steaks
 Steak Seasoning( You can use my recipe or store bought)
 2 tbsp Butter
Blue Cheese & Herbs Compound Butter
 1 tbsp Chopped Thyme
 ½ cup Butter ( Room Temperature)
 2 tbsp Blue Cheese Crumbles
 ½ tsp Garlic Powder
Blue Cheese & Herb Compound Butter

Place butter, blue cheese, garlic powder, and thyme in a bowl. Mash together with a fork until well combined.

Lay out a sheet of plastic wrap and scoop the mixture on top. Fold the plastic wrap over your butter and roll into a log. Set aside in the fridge to chill.

Steak

Season your steak and place uncovered in the fridge overnight.

Bake in the oven at 250F until your steak reaches 10 degrees below your desired serving temperature. I prefer medium rare to rare and aim for 129F.

Sear in a hot skillet with oil, basting with reserved plain butter as you go. Remove when it hits desired temperature, then allow to rest for 15 minutes on the counter.

Serve with a dollop of blue cheese butter.
