In a saucepan over medium heat sauté carrots and onions in oil for about 5 minutes.
Lower the heat an add butter to the pan. Once butter is melted add flour and mix until throughly combined.
Add stock, thyme and bay leaf, then simmer for 5-10 minutes. Once everything looks thick and combined add salt and pepper to taste.
Set a mesh strainer over a large bowl. Pour gravy on top and strain out all the vegetables and herbs.
