In a large pot over low heat cook two cups of blueberries. When the blueberries start to liquify (about 3-5 minutes) add sugar and bring to a simmer.
In a small bowl whisk together cornstarch and water. Slowly pour into the cooked blueberries and stir till everything is combined. Cook over medium heat until mixture comes to a boil and looks thick.
Turn off the heat an add lemon zest, cinnamon, nutmeg and remaining two cups of blueberries.
Allow to chill.
Tip: Works well with unbaked pie crust. Preheat oven to 400F, place pie in oven then lower to 375F bake for 40 minutes or till crust is golden brown.
