Sausage and Seafood Gumbo

Cajun Seasoning
 1 ½ tbsp ground black pepper
 1 tbsp oregano
 1 tbsp thyme
 1 tbsp paprika
 1 tbsp kosher salt
 1 tbsp garlic powder
 1 tbsp onion powder
 ½ tbsp cayenne pepper
 1 tsp brown sugar
Seafood Stock
 1 lb crab legs
 1 shell of a lobster tail
 the shells of 1.5 lbs of shrimp
 ½ of an onion
 2 bell pepper tops
 4 garlic cloves
 1 top of celery leaves
 1 bay leaf
 8 cups water
Gumbo
 ½ cup vegetable oil
 ½ cup flour
 2 green bell peppers diced
 1 medium yellow onion diced
 6 celery stalks diced
 5 garlic cloves minced
 1 lb andouille sausage the cooked kind
 1.50 lbs raw peeled and deveined shrimp
 1 raw lobster tail
 1 tsp filé powder
 1 bunch of green onions sliced
