Perfect Mashed Potatoes

 4 large russet potatoes
 ¼ cup cream
 2 tbsp butter
 salt and pepper

Slice potatoes horizontally, then chop into moon shapes.

Place your potatoes in a pot with cool water. Bring to a boil and immediately lower to a simmer. Boil 10-20 minutes, or until you can poke through the potatoes with a fork. Remove potatoes from heat and strain out the water.

Press potatoes through a potato ricer into a large bowl. Add your cream and butter then gently mash together. Do not over work them or they will become gluey. Salt and pepper to taste.
