 23 large broccoli crowns
 2 tbsp canola oil
 4 garlic cloves
 ½ lemon
 ¼ cup shaved parmesan
 salt and pepper
 1 tsp red pepper flakes

 water

Cut and prepare broccoli crowns into smaller pieces.

Place ice in a large bowl of water and set aside. Line a large plate with paper towels and set aside.

Fill a large pot with water and bring to a boil. Add broccoli and boil for one minute, just until the broccoli looks brighter in color. " Do not over boil!"

Remove broccoli with a strainer, immediately place broccoli in the ice water. Let it sit for 2 minutes. Remove the broccoli from the ice bath and transfer it to the plate that has been lined with the paper towels.

Heat oil in a large skillet over low-medium heat. Add your garlic cloves and red pepper flakes, allow the oil to absorb the flavor by sautéing for 1-2 minutes.

Turn the heat up to medium-high, then add the broccoli and sauté for 2-3 minutes.

Squeeze lemon juice over the broccoli, then remove from the pan and place in your serving bowl.

Salt and pepper to taste, then toss with parmesan.
