½ cup water
 ½ cup white sugar
 ½ cup rice vinegar
 1 tbsp sambal oelekchili sauce
 1 tsp minced garlic
 ½ tbsp light soy sauce
 1 tbsp mirin wine
 ½ tbsp chili flakes
 2 tbsp cornstarch
 2 tbsp water

In a medium bowl whisk the cornstarch and two tablespoons of water together.

In the same bowl mix in the rest of the ingredients.

Transfer to a sauce pan and bring to a boil. Immediately lower and allow to simmer for 5-15 minutes. Continuously check until the sauce has thickened to a nice consistency.
